Obituary, Eileen F. O’Connor

Worcester – Eileen F. (Jackson) O’Connor, 69, passed away peacefully on Monday, December 17, 2018.

She was born in Newark, NJ, a daughter of the late John and Christine (Flanders) Jackson. During her high school years, Eileen was a member of the high school Drum & Bugle Corps, as well as remaining active with the Girl Scouts, earning their highest award, The Gold Award. Eileen graduated from Paul Smith College, with a degree in hotel and restaurant management.

Eileen spent her career working in the restaurant and food industry. She managed several restaurants in Philadelphia, Florida, Nashville, Virginia, South Carolina and New York City. Together with husband, Timothy, Eileen found satisfaction working with restaurant owners and their staffs to assist rebuilding failing businesses.

In the early 1980’s, they settled in the Poughquag, NY area where she worked as the food service manager for Vassar College, retiring in 1999. They also owned and operated the former Blue Moon Restaurant in Poughquag. Eileen was also generous with her free time. She gave many hours volunteering, especially with the Hudson River Watershed Alliance group.

Eileen’s beloved husband, Timothy died in 1996. She was also predeceased by her brother, Philip G. Jackson in 2007. She will be missed by her two brothers, John T. Jackson and his wife, Gloria of Morristown, NJ and Timothy P. Jackson of Shrewsbury, and her two sisters, Andrea M. Tavaska and her husband, John and Christine M. Jackson, both of Worcester; as well as her niece, Johanna Jackson of Portsmouth, NH.

Eileen’s family will celebrate her life with a private memorial service. Burial in Poughquag, NY will be held at a later date. Please consider honoring Eileen’s memory with a donation to the Girl Scouts of the USA (www.girlscouts.org).
